Garlic and Coconut Prawns

Ok, so the picture may be a little large - but that's the amount of love I had for this meal - HUGE LOVE!  The prawns are cooked in garlic and coconut milk, the cauliflower rice is mixed in with chopped spring onion and ginger and the broccoli and carrots are steamed in their own goodness.  This serves 2 people and is made for an 8 block zone meal, but you can adjust the amounts to suit you.  

What you need: 

  • 320g prawns (8p)
  • 360g cauliflower (2c) - chopped as small as rice
  • 120g spring onions (1c) - finely chopped
  • 330g carrot (3c) - cut into batons
  • 240g broccoli (2c) - cut into small florets
  • 100ml coconut milk (8f)
  • 2 tbs grated ginger
  • 6 cloves crushed garlic


How to put this magical meal together (yes I really loved it that much!):

  1. Chop the cauliflower into really small pieces, or make this easy on yourself and blitz it in a food processor.  In a saucepan add a little water - just so it's covered and bring to the boil for 5 minutes.  
  2. Once the cauliflower is cooked, drain the water and then add the ginger and spring onion and stir.  
  3. Steam the broccoli and carrot, just until they are cooked but still crunchy.  I do this by steaming them for 5 minutes and checking them regularly.  
  4. In a saucepan add the prawns and garlic and stir, after 2 minutes add the coconut milk and 1/4 cup water to the saucepan.  Cook until the prawns are opaque (white and red/orange).  
  5. Serve the garlic and coconut prawns over the cauliflower rice with the broccoli and carrots on the side.
